I think you might be interested in the work of my brother's PhD supervisor Prof Philippa Wiggins. She passed away a couple of years ago. Before she died she helped him build a web site about her life’s work on HDL / LDL water and it includes a number of references that you might find useful. She published numerous peer reviewed papers and one of them was about using spectroscopy to demonstrate that there were two kinds of water structure. There is more recent evidence from Stanford. See
